I can't actually remember where this came from; Waitrose magazine likely. Also not sure why it's called "tiger salad" - may be due to a bit of chilli heat. Made it today and it was lovely, if not the most filling. Amazing what a soy/sesame dressing can do to some vegetables. This is really healthy, and potentially a good work lunch.

  • 6 spring onions, finely sliced on the diagonal
  • 1 red pepper, deseeded and finely sliced
  • 1 green pepper, deseeded and finely sliced
  • 2 baby leeks, halved lengthways and finely sliced
  • 2 large handfuls of coriander leaves, finely chopped
  • 1 red chilli, finely sliced
  • sesame seeds, to serve

Dressing:

  • 2 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1tsp sesame oil
  • 1tbsp sesame seeds
  • 1/2tsp chilli flakes

Whisk the dressing ingredients together in a large bowl. Add all the other ingredients and top with some more sesame seeds.
