• Leftover roast chicken, finely chopped
  • 2 sticks lemongrass, core only finely chopped
  • 4 shallots, finely chopped
  • 1 birdseye chilli, seeds and all, finely chopped
  • 1tbsp toasted ground rice
  • large handful of fresh herbs - coriander, Vietnamese coriander, mint, roughly chopped
  • juice of a lime
  • 1tbsp fish sauce

Mix everything together and taste - it should be zingy and hot. Go easy with the lime juice and fish sauce so you can add more to taste. It should be pleasant to eat!
